Inasal Baboy is the term used for lechon among the Visayans. Known for its wide array of taste and shared experiences from the so-called "lutong experts", lechon has always been a part of Filipino cuisines and gatherings. It may signify a grand celebration, especially fiestas like the Halad and Inasal Festival in my hometown.
Every 15th of October, Talisaynons celebrate their Inasal Festival with great culture and energy. Hundreds of people appear on the local road of Dumlog to Poblacion. Gracefully carrying the inasal, dancers really find a way to make Filipinos realize the vital role and importance of tradition, not only in the society but also on how we can mold future generations. It totally packages the great influence of the Spaniards in our daily living. The spectacle and weather stress the entire and annual merriment not only among Talisaynons, but also to foreigners who highly participate. The memory itself is intense.
I can say that lechon in dresses and decoration is the main attraction. This goes to show how the original inasal tastes like. Never tried? I bet you just miss a half of your life.
